True. And everyone loves bacon. It's salty.

Bacon is exquisite stuff. If you don't handle it right it's a bit limpid and flabby. If you know what you're doing though, you get a nice stiff piece of yummy scrumptiousness.

Technique is important when flipping bacon. It's all in the wrist.

I'm rethinking my resistance to the bacon / chocolate combo.

Then of course draining it, there at the end. If you don't do that right the mouth feel is all wrong.

There are two camps, really. Some shake the bacon off, others drain it on a towel.
A less popular, but more natural approach is to eat the bacon while it's still dripping.

The most important thing is to select quality bacon. I look for thick, meaty slices.

If you do shake it, take care you don't accidentally get splattered in the face.

I always thump my melons, but I'm not quite sure what I'm supposed to listen for.

I smell melons. Really just stick your nose tight against them and inhale. They should smell like ripe melons.
